# Ingredients:

→ Proteins & Dairy

01 - 4 slices of cheese (cheddar, provolone, or Swiss)
02 - 2 chicken breasts, boneless and skinless

→ Bread & Spreads

03 - 1 tablespoon Dijon mustard
04 - 2 tablespoons mayo
05 - 4 slices of your choice of bread (like sourdough or ciabatta)

→ Produce

06 - 1 tomato, cut into slices
07 - 1 avocado, sliced up ripe
08 - 1 small red onion, sliced super thin

→ Oils & Seasonings

09 - Salt and pepper, adjust to taste
10 - Butter or olive oil for toasting
11 - 1 tablespoon olive oil

# Instructions:

01 - Sprinkle both sides of chicken with salt and pepper. Heat oil in a skillet over medium-high heat, then cook each side for 6-7 minutes till fully cooked. Slice thinly after letting it rest away from the pan.
02 - Slice up your avocado, shred the cheese you want to use, cut the red onion into thin rounds, and slice the tomato. Keep them handy.
03 - Spread some mayo and Dijon underneath on each slice of your bread.
04 - On one slice per sandwich, stack the layers—chicken, onion slices, your cheese, tomato layers, and avocado. Cover with the other slice of bread, mayo against the filling.
05 - Start by heating a skillet to medium heat, tossing in olive oil or butter. Add your sandwich and cook until golden—pressing down lightly with a spatula till the cheese is gooey and melted, about 3-4 minutes per side.
06 - Move the sandwiches off the heat. Wait a minute to slice them down the middle. Serve while warm.
