Bacon Cheese Loaded Fries (Print Version)

# Ingredients:

→ Base

01 - 1½ to 2 pounds frozen pre-seasoned potatoes (waffle, curly, or crinkle cut)

→ Cheese Sauce

02 - 3 tablespoons butter, unsalted
03 - 3 tablespoons regular flour
04 - 2 cups full-fat milk
05 - 16 ounces American processed cheese blocks (such as Velveeta)
06 - 3 tablespoons juice from pickled jalapeños
07 - 1/8 teaspoon ground cayenne
08 - Kosher salt as needed

→ Toppings

09 - 3/4 pound crispy cooked bacon, chopped into bits
10 - 3 green onions, just the green parts, sliced thin
11 - Pickled jalapeños as desired
12 - Mexican crema or sour cream as desired

# Instructions:

01 - Follow the package instructions to bake your frozen potatoes until crispy.
02 - Mix butter and flour in a pan to make a base, pour in milk while stirring, then melt in the cheese, jalapeño juice, and spices until it's silky.
03 - Put down fries, pour cheese, sprinkle bacon, scatter green onions. Do this twice for even layers.
04 - Scatter jalapeños and dollop with crema or sour cream on top. Don't wait to eat it.
