Combine softened cream cheese, shredded cheddar, crumbled bacon, ranch seasoning (if using), garlic powder, and chopped chives in a bowl. Mix until thoroughly blended.

Select pairs of Doritos chips of similar size. Spread a small portion of the cheese filling onto one chip and sandwich with a second chip. Continue until all filling is used.

Arrange three shallow bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs.

Dip each stuffed Doritos sandwich into the flour, shaking off excess, then into the beaten egg, and finally coat evenly in panko breadcrumbs.

Fill a deep skillet or pot with about 5 cm of oil. Heat to 175°C.

Fry the breaded stuffed chips in batches for 1–2 minutes per side, turning as needed until crisp and golden brown. Remove with a slotted spoon and drain on paper towel.
