Preheat oven to 200°C (400°F). Line a baking sheet with parchment paper or lightly grease the surface.

Steam or boil broccoli florets for approximately 5 minutes until tender. Drain thoroughly, then finely chop the broccoli or pulse briefly in a food processor.

In a large bowl, combine chopped broccoli, shredded cheddar, breadcrumbs, Parmesan, minced garlic, chopped green onions or parsley, and the egg. Season to taste with salt and black pepper. Mix until all ingredients are evenly distributed. Add extra breadcrumbs if needed to achieve a firm mixture.

Scoop about 1 to 1.5 tablespoons of mixture and form into compact balls. For a crispier result, roll each ball in additional breadcrumbs, if preferred.

Arrange shaped balls on the prepared baking sheet. Lightly spray or brush the tops with olive oil. Bake for 20 to 25 minutes, turning once halfway, until golden and crisp.

Serve warm accompanied by dipping sauces such as ranch, marinara, or garlic aioli.
