Heat the oven to 375°F (or 190°C). Use a small amount of olive oil to coat a baking tray or apply a nonstick spray.

In a big bowl, mix the chopped salmon, breadcrumbs, whisked egg, parsley, garlic powder, paprika, and add a pinch of salt and pepper. Stir until blended well.

Roll the salmon mixture into little balls, about a tablespoon each, and arrange them on the baking tray. Sprinkle olive oil on top and bake for 12-15 minutes or until cooked through, with an internal temperature of 145°F (63°C).

As the meatballs cook, blend the avocado, sour cream, lemon juice, minced garlic, and a bit of salt and pepper until it’s creamy and smooth.

Dish out the salmon meatballs and drizzle the smooth avocado sauce on top. Add a sprinkle of parsley for garnish, if you’d like.
