Baked Salmon Avocado Sauce (Print Version)

# Ingredients:

→ Meatballs

01 - 1 pound chopped salmon fillet, skin removed
02 - 1 egg, whisked lightly
03 - 1/2 teaspoon paprika powder
04 - Salt and pepper as needed
05 - 1 tablespoon olive oil for cooking
06 - 1 teaspoon garlic powder
07 - 2 tablespoons chopped fresh parsley
08 - 1/2 cup breadcrumbs

→ Avocado Sauce

09 - 1 ripe avocado, soft
10 - 1 clove garlic, finely minced
11 - Salt and pepper, to your liking
12 - 1/4 cup sour cream
13 - 1 tablespoon fresh lemon juice

# Instructions:

01 - Heat the oven to 375°F (or 190°C). Use a small amount of olive oil to coat a baking tray or apply a nonstick spray.
02 - In a big bowl, mix the chopped salmon, breadcrumbs, whisked egg, parsley, garlic powder, paprika, and add a pinch of salt and pepper. Stir until blended well.
03 - Roll the salmon mixture into little balls, about a tablespoon each, and arrange them on the baking tray. Sprinkle olive oil on top and bake for 12-15 minutes or until cooked through, with an internal temperature of 145°F (63°C).
04 - As the meatballs cook, blend the avocado, sour cream, lemon juice, minced garlic, and a bit of salt and pepper until it’s creamy and smooth.
05 - Dish out the salmon meatballs and drizzle the smooth avocado sauce on top. Add a sprinkle of parsley for garnish, if you’d like.
