Basmati Rice with Cashews (Print Version)

# Ingredients:

01 - 1 ¾ cups chicken or vegetable stock
02 - ½ medium yellow onion, diced finely
03 - 1 tablespoon olive oil
04 - ½ cup chopped roasted cashews (unsalted)
05 - 1 cup rinsed basmati rice
06 - ½ teaspoon curry powder
07 - ½ teaspoon coarse salt
08 - ½ cup sultanas or golden raisins
09 - 1 teaspoon turmeric powder
10 - 2 tablespoons fresh parsley or cilantro, chopped (optional)

# Instructions:

01 - Warm up the olive oil on medium heat in a saucepan. Add the onion and cook for 3–4 minutes until soft.
02 - Toss in the rice, turmeric, curry powder, and salt. Stir frequently for 1–2 minutes to toast it slightly.
03 - Pour in the broth and raisins. Wait for it to boil, then lower the heat to simmer. Cover it and let it cook for 15 minutes until all the liquid is absorbed and the rice is soft.
04 - Rest the rice for 5 minutes. Mix in the cashews and optional parsley or cilantro, fluffing it up with a fork before serving.
