Bold Blackened Mahi Mahi (Print Version)

# Ingredients:

→ Fish and spice mix

01 - 1 tbsp blackening spice blend
02 - 1 lb mahi mahi
03 - A pinch or up to 1/2 tsp salt (optional)

→ Fat for cooking

04 - 2 tbsp butter or oil (your choice)

→ Toppings (optional)

05 - Slices of lemon
06 - Chopped parsley

→ DIY blackened spice mix (optional)

07 - 1 tbsp of paprika
08 - 1 tbsp garlic powder
09 - 1 tbsp onion powder
10 - 1 tbsp ground black pepper
11 - 1 tsp dried oregano
12 - 1 tsp cayenne powder
13 - 1 tsp dried basil
14 - 1 tsp dried thyme
15 - 1 tsp salt (optional)

# Instructions:

01 - For homemade seasoning, toss everything together in a bowl or jar and stir well.
02 - Divide mahi mahi into four fillets and blot them dry with paper towels.
03 - Sprinkle your spice mix (and a little salt, if you're using it) over the fillets, covering them evenly.
04 - In a cast-iron pan on medium-high heat, let butter melt for about a minute. Cook fillets, skin-side up first, for 4-5 mins. Turn over and fry another 3-4 mins until they're done.
05 - Put the fish on plates, add lemon slices, and sprinkle parsley on top if you want.

# Notes:

01 - Spice blends vary in saltiness, so adjust extra salt to your liking.
02 - A good sear and crust comes from using a cast-iron pan. It's worth it!
