For homemade seasoning, toss everything together in a bowl or jar and stir well.

Divide mahi mahi into four fillets and blot them dry with paper towels.

Sprinkle your spice mix (and a little salt, if you're using it) over the fillets, covering them evenly.

In a cast-iron pan on medium-high heat, let butter melt for about a minute. Cook fillets, skin-side up first, for 4-5 mins. Turn over and fry another 3-4 mins until they're done.

Put the fish on plates, add lemon slices, and sprinkle parsley on top if you want.
