Buttery Peanut Cookies (Print Version)

# Ingredients:

→ Cookie Base

01 - 1 large egg
02 - 1 tsp of vanilla extract
03 - 1 cup of granulated sugar
04 - 1 cup of peanut butter (chunky or smooth)

# Instructions:

01 - Set your oven to 350°F (175°C). Cover a baking tray with a silicone mat or baking parchment.
02 - Stir together the sugar, peanut butter, egg, and vanilla in a mixing bowl. Keep mixing until it turns into a thick, lump-free dough.
03 - Scoop out a tablespoon of the dough and turn it into a ball. Spread the balls out on your tray, leaving about 2 inches in between. Press each with a fork to make a crisscross design.
04 - Pop the cookies in the oven for roughly 8-10 minutes. The edges should be firm while the centers stay a little soft—they’ll firm up as they cool.
05 - After baking, leave the cookies on the tray for about 5 minutes. Then, set them on a rack to cool completely.

# Notes:

01 - If you like softer cookies, take them out just a bit earlier and let them cool on the tray.
02 - Mix in chopped chocolate or nuts for extra crunch.
03 - Want a low-sugar option? Swap in coconut sugar or monk fruit sweetener.
