Butter Onion Cajun Style (Print Version)

# Ingredients:

→ Main Ingredients

01 - 1 big (15 ounce) Vidalia onion, outer skin removed and tips cut off
02 - 1 tablespoon plant-based butter
03 - 1 tablespoon cold-pressed olive oil
04 - 1 teaspoon Louisiana spice mix
05 - 1/4 teaspoon salt, with extra for adjusting flavor

→ Optional Additions

06 - 1/4 teaspoon powdered garlic
07 - 1/4 teaspoon seafood seasoning blend
08 - Chopped fresh parsley for topping

# Instructions:

01 - Set your oven to 375 degrees F and let it warm up.
02 - Grab a melon baller and dig out the middle top part of the onion about a third down to make a little cup. Set it on some foil and drop butter into the hollow. Stir your spices with oil and drizzle over the butter, letting it run down the sides. Sprinkle with salt.
03 - Wrap the onion completely in the foil and put it in a small oven-safe dish or iron pan to catch any oil that might leak out.
04 - Put it in the middle of the oven for an hour. Poke with a fork to make sure it's soft, the middle part wobbles, and edges are browning. If it's not ready, wrap it back up and cook another 10 minutes.
05 - For a darker top, unwrap foil, brush with more melted butter/oil mix and add a tiny bit of salt. Stick under the broiler for 5-10 minutes until the top turns golden. Keep an eye on it so it doesn't burn.
06 - Peel off the first layer, add salt to other layers if you want. Pour the juices from cooking over everything. Enjoy while hot with a side of rice, chickpeas or some roasted veggies.
