Preheat your oven to 200°C (400°F) so it’s all set for crisping the bread just right.

Heat olive oil in a big pan over medium-low. Toss in the mushrooms and let them cook slowly until they take on a rich, golden tone.

As the mushrooms sizzle, coat both sides of each bread slice with softened butter. Pop them in the hot oven for about 4-5 minutes until they’re lightly browned.

When the mushrooms are nicely browned and their liquid has cooked off, stir in the minced garlic. Let it cook for a minute, then mix in salt, pepper, oregano, and half the shredded mozzarella in a bowl.

Take the warm bread slices from the oven. Spread the mushroom blend on each slice, sprinkle on the rest of the mozzarella, and bake for another 8-10 minutes until the cheese bubbles. Serve it hot!
