Cheesy Meatloaf Bites (Print Version)

# Ingredients:

→ Main Proteins and Fillings

01 - Ground beef, 80/20 mix (2 pounds)
02 - Pureed bella mushrooms (1 pint)
03 - Cheddar cheese cubes (6 ounces)
04 - One large egg

→ Flavorings and Binder

05 - Sleeve of crushed buttery crackers
06 - 2 tablespoons of yellow mustard
07 - 2 tablespoons of ketchup
08 - 1 tablespoon of Worcestershire sauce
09 - 1 teaspoon of black pepper
10 - 1 teaspoon of garlic powder
11 - 1 teaspoon of onion powder

# Instructions:

01 - Set your oven to 350°F and place parchment paper on a baking tray. This makes cleanup a breeze.
02 - Use a food processor to finely puree the mushrooms. Break the crackers into crumbs. Cube the cheddar into bite-sized pieces.
03 - Toss the beef, pureed mushrooms, mustard, ketchup, Worcestershire sauce, seasonings, crackers, and egg into a big bowl. Use clean hands to mix everything together until it's blended well.
04 - Roll out 12 big meatballs and hollow the centers with your thumb. Tuck in 1-3 pieces of cheese and fold the meat over to cover completely.
05 - Transfer stuffed meatballs to the lined tray and bake for half an hour. Once done, they're ready to enjoy with your go-to sides.
