Slice onions into 1.25 cm thick rings and carefully separate each layer. Select pairs of rings, one smaller fitted inside a larger, and fill the space in between with mozzarella cheese, pressing the cheese gently to compact.

Dredge each filled onion ring in flour, ensuring even coverage. Dip the floured rings into the beaten eggs, allowing excess to drip off. Coat thoroughly in breadcrumbs, pressing lightly to adhere.

Heat oil in a deep fryer or large skillet to 175°C. Add a few onion rings at a time, without crowding the pan. Fry for 2 to 3 minutes per side, until golden and crisp.

Remove fried onion rings using a slotted spoon and place on a plate lined with paper towels to absorb excess oil. Serve immediately while hot.
