Easy Slow Cooker Chicken Bowl (Print Version)

# Ingredients:

→ Slow Cooker Chicken Mix

01 - 2-2.5 pounds of boneless, skinless chicken breasts
02 - 480 ml chunky-style salsa
03 - 1/3 cup cilantro lime dressing, plus more for topping
04 - 1/2 cup chicken stock
05 - 1/2 teaspoon cumin powder
06 - 1/2 teaspoon chili powder
07 - 1/2 teaspoon smoked paprika spice

08 - Cooked rice (4 cups)
09 - 2 cups sweet corn (frozen or canned)
10 - 1 can of low-sodium black beans (400g), rinsed
11 - 3 avocados, ripe
12 - 1 large lime, sliced into wedges
13 - 1/4 cup chopped fresh cilantro leaves

# Instructions:

01 - Toss the chicken, salsa, cilantro lime dressing, broth, and spices into the slow cooker. Turn it on high and let it cook for about 4 hours.
02 - Use two forks to pull the cooked chicken apart into shreds. Leave it in the cooker for another 10 minutes to soak up all the flavors. Taste and adjust seasoning if needed.
03 - Make the rice according to the package directions. Warm up the black beans and the corn. Chop your cilantro, dice the avocados, and slice the lime.
04 - In each serving bowl, layer rice, shredded chicken, beans, corn, and avocado chunks. Sprinkle with chopped cilantro, set lime slices on the side, and drizzle with extra cilantro lime dressing.
05 - Serve while it's still hot. Let everyone squeeze their lime over the meal as they like.
