Cozy Chicken Soup (Print Version)

# Ingredients:

01 - 8 ounces cremini mushrooms
02 - 1 pound Yukon Gold potatoes
03 - 4 tablespoons salted butter
04 - 3 tablespoons olive oil, split usage
05 - 1 large onion, diced into small bits
06 - 2 large carrots, peeled and chopped into coins or small pieces
07 - 3 cloves of garlic, finely chopped
08 - A generous ½ cup of plain flour
09 - 2 quarts chicken broth, low-sodium
10 - 1 teaspoon of fine sea salt
11 - ½ teaspoon freshly ground black pepper
12 - A teaspoon of thyme (dried)
13 - 1 can (15.25 ounces) of drained sweet corn
14 - 1 cup peas (frozen works great)
15 - 3 cups shredded chicken that’s already been cooked
16 - 1 cup heavy whipping cream
17 - Salt and pepper for taste-testing and adjusting
18 - Chopped parsley for topping (optional)

# Instructions:

01 - Wash the mushrooms and dice them into halves, quarters, or smaller chunks for larger ones. Peel and cut the potatoes into bits, placing them in a bowl of cold water to stay fresh while you work on the rest.
02 - Take out a heavy-duty pot or Dutch oven, and warm it up over medium-high heat with a tablespoon of olive oil. Toss the mushrooms in with a pinch of salt, stirring occasionally until they shrink in size and become golden. Set them aside once done.
03 - Using the same pot, lower the heat to medium and melt the butter with the last 2 tablespoons of olive oil. Drop in the onion and carrot pieces. Stir them now and then until the onions look tender and clear, which usually takes around 5 minutes.
04 - Toss the garlic into the pot and stir it for a quick minute. Sprinkle the flour over the veggies, mixing to coat everything. Let it cook for 1-2 minutes while stirring nonstop. Slowly pour in the chicken broth as you stir.
05 - Drain the soaked potatoes and drop them into the pot, followed by the thyme, salt, and pepper. Bring it all to a gentle boil, then lower the heat to let it simmer. Stir every so often for about 15 minutes until the potatoes are soft.
06 - Pour in the cream, then carefully add your cooked mushrooms, corn, frozen peas, and shredded chicken. Let it cook for another 5-10 minutes, stirring sometimes, until everything's warmed through. Adjust the seasoning if needed.
07 - Dish everything up while hot and sprinkle some freshly minced parsley on top if you’d like. Great with biscuits on the side!
