Rich Chicken Curry Dish (Print Version)

# Ingredients:

→ For the Chicken Marinade

01 - Cut-up boneless chicken thighs without skin (28 oz)
02 - Regular yogurt (1 cup)
03 - Crushed garlic (1½ tablespoons)
04 - Grated fresh ginger (1 tablespoon)
05 - Garam masala powder (2 teaspoons)
06 - Yellow turmeric powder (1 teaspoon)
07 - Cumin powder (1 teaspoon)
08 - Kashmiri or regular red chili powder (1 teaspoon or ½ teaspoon)
09 - Table salt (1 teaspoon)

→ For the Sauce

10 - Regular cooking oil (2 tablespoons)
11 - Unsalted butter (2 tablespoons)
12 - Chopped onions (2 small or 1 large)
13 - Grated garlic cloves (1½ tablespoons)
14 - Grated ginger root (1 tablespoon)
15 - Garam masala spice mix (1½ teaspoons)
16 - Ground cumin seeds (1½ teaspoons)
17 - Yellow turmeric (1 teaspoon)
18 - Ground coriander seeds (1 teaspoon)
19 - Canned tomato sauce (14 ounces)
20 - Kashmiri chili powder for color (1 teaspoon, optional)
21 - Spicy red chili powder (1 teaspoon, to taste)
22 - Kitchen salt (1 teaspoon)
23 - Thick cream or canned milk (1¼ cups)
24 - Dark brown sugar (1 teaspoon)
25 - Plain water (¼ cup, as needed)
26 - Chopped fresh cilantro leaves (4 tablespoons)

# Instructions:

01 - Toss chicken chunks with all the marinade stuff in a container. Let it sit at least 10 minutes or up to a day in the fridge for better flavor.
02 - Pour oil in a hot pan. Cook chicken in small batches about 3 minutes each side till golden. Put aside on a plate.
03 - Drop butter in the same pan. Cook onions till they're soft and clear, getting all the tasty bits off the bottom. Throw in garlic and ginger and cook till you can really smell them.
04 - Toss in all your spices and stir for a minute. Add tomato sauce, both chili powders, and salt. Let it bubble gently for 10-15 minutes till it gets thicker and darker.
05 - Mix in cream and sugar. Drop chicken back in and let it cook 8-10 minutes till fully done. Add a splash of water if it's too thick. Sprinkle cilantro on top before serving.

02 - You can cut back on chili powder if you don't like heat
03 - Try canned milk instead of cream for fewer calories
