Crispy Baked Za'atar Chicken (Print Version)

# Ingredients:

01 - 1 teaspoon coarse salt
02 - 1 cup of crunchy panko crumbs
03 - 2 large chicken breasts, around 1 ¼ lbs in total
04 - 2 eggs, beaten
05 - 2 tablespoons za'atar seasoning
06 - 2 tablespoons of olive oil

# Instructions:

01 - Turn your oven on to 425°F and drizzle a bit of oil on a baking sheet so it’s ready.
02 - Cut the chicken breasts horizontally to make 4 thin pieces. Wrap them in plastic wrap, then flatten each one evenly with a meat mallet. Sprinkle salt on both sides.
03 - Warm up olive oil in a medium skillet on medium. Add panko crumbs and stir them around until they get a nice golden color, usually after 5 minutes.
04 - Pour the toasted panko into a shallow dish and mix in za’atar until it's evenly spread.
05 - Beat the eggs in one shallow dish. Measure some flour into a second dish.
06 - First, lightly coat each cutlet with flour and tap off the extra. Next, dip them into the eggs, making sure they’re completely coated. Finally, press them into the breadcrumb mixture so it sticks.
07 - Lay the breaded chicken on the oiled baking sheet and bake for about 15 minutes. Check that they’re fully cooked through before taking them out.

# Notes:

01 - If you’ve got smaller chicken breasts (around 5–6 oz each), there’s no need to slice them.
