Crispy Egg Tortilla (Print Version)

# Ingredients:

01 - 1 tortilla, large and about 10 inches wide
02 - 4 eggs, large
03 - 1/3 cup of cottage cheese
04 - 1/4 teaspoon of onion powder
05 - 1/4 teaspoon of garlic powder
06 - 1/4 teaspoon of kosher salt
07 - 1/4 teaspoon of black pepper, ground
08 - 1/2 cup of red bell pepper, chopped into small pieces
09 - 1/2 cup of baby spinach, roughly chopped
10 - 1/3 cup of Mexican-style shredded cheese

# Instructions:

01 - Move the rack to the middle of the oven and set it to heat up to 350°F.
02 - Gently place the tortilla inside a 9-inch pie pan, pressing it to match the pan’s shape.
03 - Toss the eggs, cottage cheese, garlic powder, onion powder, black pepper, and salt into a blender and blend until smooth.
04 - Pour your blended egg mix into the tortilla-laden pie pan. Sprinkle spinach and bell pepper, then finish it off with a layer of cheese on top.
05 - Pop into the oven and bake for around 23-25 minutes until the center feels firm. Let it cool for 5 minutes, slice it up, and dig in.
