Easy Crispy Feta Fried Eggs (Print Version)

# Ingredients:

→ Base

01 - 1 small tortilla or a toasted slice of bread
02 - 1 large egg
03 - 20 grams of feta cheese
04 - 1/4 of an avocado

→ Seasonings and Toppings

05 - Chili oil to drizzle on top
06 - Pickled onions to finish it off
07 - Olive oil spray or cooking oil spray
08 - A squeeze of lemon juice
09 - Oregano (dried works great!)
10 - Some red pepper flakes

# Instructions:

01 - Give your small pan a quick coat with an oil spray, then sprinkle feta all across the pan, even around the edges for extra crispiness.
02 - Heat the feta over medium heat until it gets melty and golden. Careful not to overdo it! Then, crack an egg right on top.
03 - Sprinkle the egg and cheese with your oregano and red pepper flakes. Cook the egg exactly how you like it – soft yolk or fully cooked.
04 - As your egg is cooking, warm up your tortilla and spread avocado on top. Finish with a little bit of squeezed lemon juice for zing.
05 - When your egg is cooked and the feta’s got that crisp, carefully transfer it onto the tortilla. Garnish with pickled onions and a splash of chili oil, and you're good to go!
