Choc Strawberry Cheesecake (Print Version)

# Ingredients:

→ Cookie Base

01 - 2¾ cups regular flour
02 - ½ cup black cocoa powder
03 - 1 teaspoon baking powder
04 - ½ teaspoon baking soda
05 - ¼ teaspoon salt
06 - 1 cup cold unsalted butter, chopped up
07 - ¾ cup lightly packed brown sugar
08 - ½ cup white sugar
09 - 2 large eggs
10 - 2 teaspoons vanilla extract

→ Mix-ins

11 - 6 ounces dark chocolate, cut into chunks
12 - ½ cup chocolate chips
13 - 1 cup raspberries, fresh

→ Topping

14 - 4 ounces dark chocolate, cut into chunks
15 - 1 tablespoon coconut oil
16 - ½ cup crushed freeze dried raspberries or strawberries

# Instructions:

01 - Mix flour, cocoa powder, baking powder, baking soda, and salt together in a bowl.
02 - Whip cold butter until it clumps together. Drop in sugars, add eggs one by one, and pour in vanilla. Gently combine with flour mix until barely mixed. Stir in the dark chocolate chunks.
03 - Form dough into 10-12 balls. Cut each ball in half, push chocolate chips and raspberries into one side, then cover with the other half. Chill for 1 hour.
04 - Put in oven at 375°F for 18-20 minutes, leaving 2 inches between each cookie. Let them cool a bit.
05 - Mix melted chocolate with coconut oil. Pour over cookies and sprinkle with crushed freeze-dried berries. Wait 30 minutes before eating.

# Notes:

01 - Using cold butter makes the cookie texture way better
02 - You can make the dough early and keep it in the fridge
03 - Make sure cookies have room to grow as they'll spread out
