# Ingredients:

→ Base Ingredients

01 - 1 small head of iceberg lettuce, chopped into tiny pieces
02 - 1/2 red onion, minced finely
03 - 1/4 cup sliced banana peppers, extra for topping if you like
04 - 1 pint of cherry or grape tomatoes, cut into halves

→ Meats & Cheeses

05 - 12 slices of Genoa salami, diced
06 - 8 slices of provolone, chopped
07 - 10 pieces of deli turkey, chopped up
08 - 2 ounces of pepperoni (roughly 28-30 slices), cut into chunks
09 - 10 slices of Black Forest ham, cut into pieces

→ Rich Italian Dressing

10 - 3/4 cup of mayo
11 - 1 tablespoon of dried Italian herbs
12 - 1 tablespoon of red wine vinegar
13 - 2 teaspoons of juice from a jar of banana peppers
14 - 2 teaspoons of finely chopped garlic (about 2 cloves)
15 - 1/4 teaspoon of salt
16 - 1/4 teaspoon of black pepper, freshly ground for better flavor
17 - 1/4 cup of Parmesan cheese, freshly grated

# Instructions:

01 - Grab a small bowl and whisk together the mayo, red wine vinegar, Italian herbs, banana pepper liquid, garlic, salt, and pepper until smooth. Stir in the Parmesan cheese at the end, then set it aside to let the flavors blend while working on the salad fixings.
02 - Take the iceberg lettuce and chop it finely, then toss it in a large bowl. Slice up the meats and cheeses into strips, then cut those into smaller chunks. Halve the tomatoes, mince the red onion, and chop the banana peppers into tiny bits.
03 - In the large bowl, add the lettuce first. Toss in the diced meats and cheeses, followed by the halved tomatoes, minced red onion, and banana peppers. Gently toss it all until everything looks evenly mixed.
04 - When it's time to eat, pour the dressing over the salad. Using a pair of salad tongs or big spoons, give it a light toss until the dressing coats everything. Serve right away for the freshest bite.
05 - To prepare in advance, layer all your cut salad items into a big container. Keep the dressing stored separately in a smaller container. Pop both in the fridge for up to 2 days. Mix the dressing in just before serving so the lettuce doesn’t get soggy.

# Notes:

01 - This is a great option for anyone on a keto or low-carb plan since it skips the bread but keeps all the tasty parts of an Italian sub.
02 - To ensure you get a mix of everything in one forkful, cut all items into evenly sized small pieces.
03 - For those who don’t mind a bit of bread, pairing this salad with garlic breadsticks or toasted Italian bread gives a more authentic sandwich feel.
