Get your oven ready by preheating it to 375°F. Lay a sheet of parchment on a baking tray.

In a big bowl, stir together the self-rising flour, cocoa powder, sugar, sourdough discard, and yogurt until everything is blended. The dough will feel sticky.

Dust a surface with plenty of flour, then move your dough there and knead until it’s smooth. Add more flour, one tablespoon at a time, if the dough is too sticky.

Flatten the dough out, place ½ cup of the chocolate chips in the middle, and fold the dough over them. Knead to evenly spread them throughout.

Cut the dough into 8 equal parts. Roll each one into a rope, then shape it into a circle, making sure to press the ends together so they stick.

Brush each bagel with the egg wash, sprinkle the leftover chocolate chips on top, and bake for 20–22 minutes at 375°F.
