Easy Beef Potato Skillet (Print Version)

01 - 1.5 lbs Yukon gold potatoes, peeled and cubed
02 - 2-3 green onions, chopped
03 - 2 tablespoons Worcestershire sauce
04 - 1 teaspoon Dijon mustard
05 - 1 medium yellow onion, diced
06 - 1 cup beef stock or water
07 - 1 red bell pepper, diced
08 - 1 lb lean ground beef
09 - 2 tablespoons olive oil

10 - 1 teaspoon salt, divided
11 - ½ teaspoon black pepper, divided
12 - 1 teaspoon garlic powder, divided
13 - 2 teaspoons dried thyme, divided
14 - 2 teaspoons paprika, divided
15 - 1 tablespoon cumin, divided

# Instructions:

01 - Get a big skillet and warm the olive oil over medium heat. Toss in the ground beef and add half the spice mix (½ tbsp cumin, 1 tsp paprika, 1 tsp dried thyme, ½ tsp garlic powder, ½ tsp salt, ¼ tsp black pepper). Stir it around as it browns, breaking it into small pieces. Once cooked through, move it to a plate and put it aside.
02 - Using the same skillet, drop in the cubed potatoes. Sprinkle on the other half of the spices. Pour beef stock over the top, cover the pan, and let it cook for 8-10 minutes. Stir now and then. Cook until the potatoes are nice and soft and the liquid is mostly gone.
03 - Toss the diced red bell pepper and onion into the skillet with the potatoes. Let them cook together, stirring at times, until they're soft, about 5 minutes.
04 - Add the cooked ground beef back into the skillet. Pour in Worcestershire sauce and Dijon mustard. Mix everything so the flavors blend well. Cook for another few minutes, just until it's all warmed up. Taste it and tweak the seasonings if you’d like.
05 - Scatter the chopped green onions on top before serving. Enjoy it warm as a filling main course!

01 - This dish is made in one pan, easy for busy weeknights, and the leftovers are super tasty.
02 - Want extra flavor? Add a couple of minced garlic cloves when cooking onions and bell peppers.
