Crispy British Bubble and Squeak (Print Version)

# Ingredients:

→ For the base

01 - A couple of heaping cups of yesterday's mashed potatoes
02 - 1 cup of any cooked veggies you’ve got lying around (think carrots, peas, Brussels sprouts, or even cabbage), roughly chopped
03 - Half a cup of fresh onion, diced into tiny pieces

→ For frying

04 - Two tablespoons of top-notch butter
05 - Two tablespoons of olive oil (go for the extra virgin kind)
06 - A good pinch of sea salt and some freshly cracked black pepper

# Instructions:

01 - In a big bowl, mix together your cold mashed potatoes, chopped vegetables, and diced onion so everything’s blended well.
02 - Put your pan on medium heat, then toss in the butter and olive oil. Let them melt together and get the pan nice and hot.
03 - Spread the potato mixture into the pan evenly and let it cook for 10-15 minutes undisturbed, forming a crispy, golden crust at the bottom.
04 - Carefully turn the mixture to cook the other side for another 5-10 minutes. It’s fine if it falls apart a little—it adds character!
05 - Taste it, sprinkle on more salt and pepper if needed, and dig in while it's warm and crunchy!
