Easy Butternut Squash Casserole (Print Version)

# Ingredients:

→ Vegetables

01 - 2 cups cauliflower florets
02 - 2 cups butternut squash, cubed
03 - 1/2 cup red onions, diced

→ Cheese

04 - 1 cup Parmesan cheese, grated
05 - Aged cheddar cheese, to taste

→ Seasonings & Soups

06 - 1 teaspoon sea salt
07 - 1 teaspoon black pepper
08 - 1 can celery soup

# Instructions:

01 - Place cauliflower florets, cubed butternut squash, and diced red onions in a large mixing bowl.
02 - Add grated Parmesan cheese, sea salt, and black pepper to the bowl and toss to combine.
03 - Pour in the celery soup and stir thoroughly until all the ingredients are evenly coated.
04 - Transfer the mixture to a square baking dish and spread in an even layer. Generously top with aged cheddar cheese.
05 - Preheat oven to 190°C. Bake uncovered for 25 minutes, or until the cheese is golden and the vegetables are tender.
06 - Remove the dish from the oven and allow it to cool for several minutes before serving.

01 - For a crispier topping, place under the grill for the final 2–3 minutes.
