Tasty Chicken Chimichangas (Print Version)

# Ingredients:

→ Main Filling

01 - A couple of cups of cooked chicken, either shredded or diced
02 - One can of refried beans
03 - Half a cup of your favorite salsa
04 - A cup of shredded cheese (cheddar or a Mexican blend works great)
05 - Two green onions, finely chopped

→ Seasonings

06 - A teaspoon of ground cumin
07 - A teaspoon of chili powder
08 - Half a teaspoon of crushed dried oregano

→ Assembly

09 - 6 large tortillas made from flour
10 - A few tablespoons of vegetable or canola oil

→ Optional Toppings

11 - Serve with some salsa
12 - Add sour cream if you'd like
13 - Top it off with guacamole

# Instructions:

01 - Use a frying pan to cook chicken breasts until they're cooked through and no longer pink. Let the chicken cool for a little bit, then chop it up.
02 - In a mixing bowl, throw in the chicken, refried beans, cheese, salsa, spices, and green onions, then stir till everything's combined.
03 - Scoop about half a cup of the chicken filling into the middle of each tortilla. Fold the sides in, then roll them up like burritos.
04 - Heat your oven to 400°F. Lightly coat the chimichangas with some oil, then bake them for around 25 minutes until they're crispy and golden brown.
05 - Warm up some oil in a skillet over medium heat. Put the burritos seam-side down, flipping them every 20–30 seconds until all the sides are nicely golden.
