Feta Eggs with Crisp Edge (Print Version)

# Ingredients:

01 - 1 fresh egg
02 - 20 grams crumbled feta
03 - 1 mini flatbread or piece of crunchy toast
04 - 1/4 ripe avocado

→ Flavors and Garnishes

05 - Sprinkle of oregano
06 - Crushed red pepper
07 - Cooking spray or olive oil mist
08 - Fresh lemon squeeze
09 - Tangy pickled onions to finish
10 - Spicy chili oil drizzle

# Instructions:

01 - Give your small pan a light coat of oil spray, then scatter feta all over, getting it right to the edges for that crispy result.
02 - Put it on medium flame until the cheese starts bubbling, about two minutes. You'll want it nice and golden, then drop your egg right in the center.
03 - Toss some oregano and red pepper bits over your egg, then cook it until the yolk's exactly how you want it.
04 - While that's happening, heat your flatbread and spread mashed avocado on it. Don't forget a tiny splash of lemon juice.
05 - When your egg looks good and the feta has a crispy golden edge, lift it carefully onto your avocado-covered base. Top with some pickled onions and a little chili oil.
