Heat your oven to 350°F. In a small dish, combine the butter, mustard, and honey. Place it in the microwave for 20 seconds so the butter softens. Stir it all well.

Take a serrated knife and split the croissants in half horizontally. Use a brush to spread the mustard and butter mix over the cut sides.

Start stacking the sandwiches by adding cheese, ham, bacon, and another cheese slice onto the bottom halves of the croissants. Top off with the other half and set them on a baking sheet.

Bake in the oven for 10 to 15 minutes until the cheese gets gooey, and the croissants develop a golden crispiness.

While the croissants are cooking, whisk up eggs, milk, salt, and pepper in a bowl. Melt some butter in a skillet on medium heat, pour in the eggs, and gently stir for 2-3 minutes to keep them soft. Move them to a bowl once done.

Take the croissants out of the oven, place the scrambled eggs over them, and sprinkle with chives if you'd like.
