# Ingredients:

01 - 8 slices of bacon, already cooked
02 - 4 croissants, large-sized
03 - ½ pound freshly sliced deli ham
04 - 8 thin slices of cheese (like cheddar, gouda, or swiss)
05 - 2 spoons of dijon mustard
06 - 2 spoons of salted butter, softened
07 - 2 spoons of honey

08 - 5 big eggs
09 - A quick splash of milk
10 - A sprinkle of salt and pepper
11 - 1 spoon of butter for cooking
12 - Chives, freshly chopped (optional for decoration)

# Instructions:

01 - Heat your oven to 350°F. In a small dish, combine the butter, mustard, and honey. Place it in the microwave for 20 seconds so the butter softens. Stir it all well.
02 - Take a serrated knife and split the croissants in half horizontally. Use a brush to spread the mustard and butter mix over the cut sides.
03 - Start stacking the sandwiches by adding cheese, ham, bacon, and another cheese slice onto the bottom halves of the croissants. Top off with the other half and set them on a baking sheet.
04 - Bake in the oven for 10 to 15 minutes until the cheese gets gooey, and the croissants develop a golden crispiness.
05 - While the croissants are cooking, whisk up eggs, milk, salt, and pepper in a bowl. Melt some butter in a skillet on medium heat, pour in the eggs, and gently stir for 2-3 minutes to keep them soft. Move them to a bowl once done.
06 - Take the croissants out of the oven, place the scrambled eggs over them, and sprinkle with chives if you'd like.

01 - For early prep, make sandwiches without eggs and chill on a tray overnight. Bake when ready, then finish with eggs on top.
02 - For make-ahead meals, assemble everything including the eggs. Wrap tightly and refrigerate for up to 3 days or freeze for about a month. Reheat in the oven at 350°F for 15 minutes or air fryer for 10-15 minutes. Don't forget to thaw frozen ones first!
