Mix water, sugar, and lavender flowers in a pot with medium flame. Keep stirring till sugar melts, let it bubble softly, then pull off heat and let sit for 10-15 minutes.

Pour through a fine strainer to get rid of flower bits and cool it down.

Drop ice into your wine glass, pour in lavender mix and lemon juice. Add bubbly wine, then splash in fizzy water.

Lightly mix everything without killing the bubbles. Stick in a lavender sprig and pop on a lemon slice.
