Cottage Cheese Cloud Bread (Print Version)

# Ingredients:

01 - Three eggs, yolks and whites divided
02 - Smooth-blended cottage cheese (half cup)
03 - Quarter teaspoon cream of tartar
04 - Half teaspoon salt
05 - One tablespoon cornstarch or arrowroot (skip if you want)

# Instructions:

01 - Warm your oven to 300°F (150°C). Put parchment on a baking tray.
02 - Grab a clean bowl and whip those egg whites with cream of tartar until they stand up straight.
03 - In another bowl, stir together the egg yolks, blended cottage cheese, salt, and cornstarch if you're using it.
04 - Gently scoop the fluffy egg whites into your yolk mix bit by bit. Don't squish out the air bubbles.
05 - Drop the mixture into 6 equal piles on your lined tray. Bake them for about 25-30 minutes until they're golden and feel firm.
06 - Give them a moment to cool before you dig in.
