Easy Garlic Aioli (Print Version)

# Ingredients:

01 - 2 to 3 cloves of garlic
02 - ¾ teaspoon of kosher salt
03 - 1 teaspoon of lemon zest
04 - 1 to 2 tablespoons of fresh lemon juice
05 - 1 cup of good-quality mayonnaise
06 - ½ to 1 teaspoon of Dijon mustard (optional)

07 - 4 garlic cloves
08 - 1 teaspoon kosher salt
09 - 1 teaspoon lemon zest
10 - 2 tablespoons + 2 teaspoons fresh lemon juice
11 - ½ teaspoon Dijon mustard (optional)
12 - 1 large egg
13 - 1 egg yolk
14 - ½ cup olive oil
15 - ½ cup light olive oil or vegetable oil

# Instructions:

01 - Take your garlic cloves, smash them, mince them up, and then mix them with kosher salt. Use the side of a large knife to work it into a paste.
02 - Stir together the garlic paste, lemon zest, lemon juice, and Dijon mustard. Let it sit for about 15 minutes to bring out the flavors.
03 - Add the whole egg and the yolk to the mixture. Gradually pour in the oils, all while blending or whisking without stopping, until it thickens and comes together.
04 - Combine the garlic mixture with mayonnaise and the rest of the ingredients. Mix it thoroughly until it’s smooth.
05 - Sample it and make adjustments if needed. Add a pinch of salt, a little pepper, or a splash more lemon juice to suit your taste.

# Notes:

01 - Roasted garlic can make it milder and less intense.
02 - The classic version needs careful whisking to get the right texture.
03 - If the garlic flavors get too strong, you can reduce them before mixing.
