Garlic Parmesan Potatoes (Print Version)

# Ingredients:

01 - 3 tablespoons melted butter.
02 - 1 teaspoon Italian herbs.
03 - 3 pounds of baby red or Yukon Gold potatoes.
04 - 1/4 cup of Parmesan cheese, grated.
05 - 4 garlic cloves, minced.
06 - 1/2 teaspoon black pepper.
07 - 2 tablespoons olive oil.
08 - 1/2 teaspoon salt.
09 - 2 tablespoons parsley, chopped fresh for garnish.
10 - Extra Parmesan cheese to sprinkle on top.

# Instructions:

01 - Coat the crock of your slow cooker with a light layer of non-stick spray.
02 - Add the potatoes directly into the prepared slow cooker.
03 - In a small bowl, combine olive oil, melted butter, Italian herbs, Parmesan, garlic, salt, and pepper. Stir until blended.
04 - Drizzle the sauce over the potatoes, then toss them gently so they’re evenly covered.
05 - Cover the slow cooker, and let it cook on HIGH for about 3-4 hours or LOW for 5-6 hours, until the potatoes are nice and soft.
06 - Before serving, sprinkle on more Parmesan and some parsley if you like.

# Notes:

01 - Chunky regular potatoes work fine too.
02 - Non-stick spray helps keep things from sticking.
