                Coat the crock of your slow cooker with a light layer of non-stick spray.

                Add the potatoes directly into the prepared slow cooker.

                In a small bowl, combine olive oil, melted butter, Italian herbs, Parmesan, garlic, salt, and pepper. Stir until blended.

                Drizzle the sauce over the potatoes, then toss them gently so they’re evenly covered.

                Cover the slow cooker, and let it cook on HIGH for about 3-4 hours or LOW for 5-6 hours, until the potatoes are nice and soft.

                Before serving, sprinkle on more Parmesan and some parsley if you like.
