Golden Crispy Rings (Print Version)

# Ingredients:

01 - 3 medium potatoes (530g), peeled and cut into chunks.
02 - ¼ cup plus 2 teaspoons (30g) of rice flour.
03 - ¼ cup of cornstarch (30g).
04 - 1/2 teaspoon of salt.
05 - A pinch of dried parsley (1/2 teaspoon).
06 - A dash of paprika (1/2 teaspoon).
07 - 1/2 teaspoon of garlic powder.
08 - Enough oil for frying.

# Instructions:

01 - Boil the potato chunks in a pot of water for about 8-10 minutes till you can easily pierce them with a fork.
02 - Pour out all the water, let the potatoes cool, and mash them until smooth and lump-free.
03 - Press the mashed potatoes through a fine sieve to make it extra smooth.
04 - Stir in paprika, dried parsley, garlic powder, and salt until combined.
05 - Mix in the cornstarch and rice flour to create a soft dough.
06 - Shape the dough into slim cylinders and then loop them into small rings.
07 - Fry the rings a few at a time in medium-hot oil for 3-4 minutes until golden and crispy.

# Notes:

01 - Chill the dough in the fridge if it's too soft.
02 - Make sure potatoes are fully drained before mashing.
03 - Rub a little oil on your hands if the dough sticks.
