Spicy Haitian Spaghetti (Print Version)

# Ingredients:

→ Main

01 - 1 (8-ounce) pack of thin pasta
02 - 8 ounces hot pork sausage, cut into rounds (230g)

→ Vegetables & Aromatics

03 - 1/2 medium white onion, chopped small
04 - 1 teaspoon crushed garlic
05 - 1 teaspoon fresh thyme, finely chopped
06 - 1/2 cup diced green pepper (120g)
07 - 1/2 cup diced red pepper (120g)
08 - 2 medium tomatoes, diced up
09 - 1 medium scotch bonnet or habanero chili
10 - 2 green onions, thinly sliced

→ Sauce & Seasonings

11 - 2 tablespoons cooking oil (30ml)
12 - 2 tablespoons thick tomato paste (30g)
13 - 1 teaspoon flavor powder (3g)
14 - Salt and pepper as needed
15 - 1 cup starchy pasta water (236ml)

# Instructions:

01 - Cook pasta in salty water till slightly firm. Save 1 cup of the cooking water before draining.
02 - Pour oil into big pan. Cook sausage slices until brown on each side for 2 minutes, then put aside.
03 - Using the same pan, cook onions, garlic, thyme, and both peppers until they get soft, about 2-3 minutes.
04 - Throw in tomatoes, tomato paste, hot pepper, flavor powder, and spices. Pour in saved pasta water and let bubble for 8-10 minutes.
05 - Toss pasta into the sauce mixture. Mix in cooked sausage and top with sliced green onions.

01 - You can swap in hot dogs or any sausage type instead of pork
02 - Folks often add sliced avocado and boiled eggs on top
