Hearty Sausage Potato Delight (Print Version)

# Ingredients:

→ Main Ingredients

01 - 450g Italian sausage, sliced or crumbled
02 - 4 medium potatoes, peeled and diced
03 - 1 medium onion, chopped
04 - 3 cloves garlic, minced
05 - 2 cups kale or spinach, chopped (approximately 100g)
06 - 1 cup carrots, diced (120g)

→ Liquids & Creams

07 - 1 litre chicken or vegetable broth
08 - 240ml heavy cream

→ Oils & Aromatics

09 - 2 tablespoons olive oil
10 - 1 teaspoon dried thyme
11 - 1 teaspoon dried rosemary
12 - Salt, to taste
13 - Black pepper, to taste

→ Garnish (Optional)

14 - Fresh parsley or chives, chopped

# Instructions:

01 - Heat olive oil in a large pot or Dutch oven over medium heat. Add Italian sausage and cook until browned, 5–7 minutes. Remove sausage with a slotted spoon and set aside, retaining drippings in the pot.
02 - Add the chopped onion to the pot and sauté until translucent, about 4–5 minutes. Stir in minced garlic and cook for an additional minute until fragrant.
03 - Stir in diced potatoes and carrots, coating them well with aromatics. Cook for 3–4 minutes until they begin to soften.
04 - Pour in chicken or vegetable broth. Add dried thyme and rosemary. Bring to a boil, reduce heat, cover, and simmer for 15–20 minutes until potatoes are tender.
05 - Add chopped kale or spinach to the pot along with the reserved sausage. Stir in heavy cream and simmer for a further 5 minutes. Season with salt and pepper as desired.
06 - Ladle into bowls and garnish with fresh parsley or chives if desired. Serve warm.

# Notes:

01 - For a lighter dish, substitute heavy cream with whole milk or a plant-based alternative.
02 - Adjust the consistency with additional broth if a thinner soup is preferred.
