01 - Chicken breasts, large (2)
02 - ½ teaspoon of garlic powder
03 - Black pepper and salt as needed
04 - 1 tablespoon olive oil
05 - Butter (1 tablespoon)
06 - Half a medium onion, diced
07 - Chicken broth, low-sodium (¾ cup)
08 - One 5.2 oz package of Boursin Fine Herbs & Garlic cheese, room temperature
09 - Fresh parsley, chopped for topping (1-2 tablespoons if desired)

# Instructions:

01 - Cut the chicken breasts into 4 thin slices lengthwise. Sprinkle with pepper, salt, and garlic powder.
02 - Warm butter and oil in a large skillet on medium-high. Cook chicken about 5-6 minutes each side until fully cooked. Set aside on a plate.
03 - Using the same pan, cook the onions until they're soft and golden, roughly 5 minutes.
04 - Pour in chicken broth and add the Boursin cheese, mixing until it's creamy. Let it bubble for 5 minutes, then stir in parsley if you want.
05 - Put chicken back in the pan with any drippings. Let it warm up and check if sauce needs thickening. Add more salt or pepper if you like.
