01 - 1.5 pounds chicken thighs (boneless), diced into small chunks
02 - 2 cups mozzarella cheese, shredded

04 - 1/4 cup gochujang (spicy)
05 - 2 tablespoons soy sauce
06 - 2 tablespoons vegetable oil
07 - 1 tablespoon sesame oil
08 - 2 tablespoons honey or rice syrup
09 - 2-3 chopped Korean chilies
10 - 6 large garlic cloves, finely minced
11 - 2 teaspoons ginger, freshly grated
12 - Black pepper and salt as needed
13 - 1/4 cup chicken stock or water

14 - Chopped green onions or fresh parsley
15 - Hot pepper flakes for extra kick

# Instructions:

01 - In a big bowl, stir together the chili powder, gochujang, soy sauce, both oils, honey, chilies, garlic, ginger, seasonings to make a rich, spicy blend.
02 - Toss your chicken pieces into the spicy mixture, making sure they're completely covered. Wrap and chill for at least an hour.
03 - Put a pan that can go in the oven over medium flame. Throw in your chicken with all the sauce, cover it up, and let it cook for about 10 minutes till the meat's done and sauce gets thicker.
04 - Switch your oven to broil mode. Sprinkle all that mozzarella on top and stick it under the broiler for 2-3 minutes until it gets bubbly and slightly golden.
05 - Scatter some herbs and extra chili flakes on top before you dig in.
