Perfect Caramelized Onions (Print Version)

# Ingredients:

01 - 90g (6 tablespoons) of unsalted butter
02 - 3 lbs (1.4kg) of thinly sliced yellow or mixed onions, about 1/8 inch thick
03 - Kosher salt and freshly ground black pepper, to your liking

# Instructions:

01 - In a big sauté pan made of stainless steel or two large skillets, heat the butter over medium-high until it starts to bubble.
02 - Toss in the onions and stir every now and then until they're soft, which should take about 8 minutes.
03 - Turn the heat down to medium-low and keep cooking, stirring more often, until the onions turn super sweet and a deep golden brown. This could take anywhere from 1 to 2 hours. If bits on the bottom start sticking or burning, pour in 1 tablespoon of water and scrape them off.
04 - Sprinkle in some salt and pepper, adjusting to your preferred taste.

# Notes:

01 - Yellow onions are your best bet, but mixing them with sweet ones (like Vidalia), red onions, or even shallots can give a more layered taste.
02 - You can store these in an airtight container in the fridge for up to 7 days. Warm them up again when you're ready to enjoy.
