In a big sauté pan made of stainless steel or two large skillets, heat the butter over medium-high until it starts to bubble.

Toss in the onions and stir every now and then until they're soft, which should take about 8 minutes.

Turn the heat down to medium-low and keep cooking, stirring more often, until the onions turn super sweet and a deep golden brown. This could take anywhere from 1 to 2 hours. If bits on the bottom start sticking or burning, pour in 1 tablespoon of water and scrape them off.

Sprinkle in some salt and pepper, adjusting to your preferred taste.
