Jamaican Banana Fritters (Print Version)

# Ingredients:

→ Batter Mix

01 - 3 medium overripe bananas, mushy and soft
02 - 1 teaspoon real vanilla extract
03 - ½ teaspoon cinnamon powder
04 - ¼ teaspoon freshly grated nutmeg spice
05 - 3 tablespoons packed brown sugar
06 - Small dash of salt
07 - 1 cup sifted all-purpose flour

→ For Cooking

08 - Plain cooking oil for frying

# Instructions:

01 - Grab a large bowl and smash those ripe bananas with a fork until they're mostly smooth but still have a bit of texture left.
02 - Stir in your brown sugar, vanilla, cinnamon, nutmeg and that tiny bit of salt. Sprinkle the flour over everything and mix until you've got a nice, even batter without lumps.
03 - Add just enough oil to cover the bottom of a 10-inch pan and heat it up over medium-high. When the oil's nice and hot, drop spoonfuls of batter into the pan. Look for golden edges and little bubbles forming - that means it's time to flip them! Cook until both sides turn golden brown.
04 - Put your hot fritters on a plate lined with paper towels to soak up extra oil. Eat them while they're still warm and crunchy on the edges!

# Notes:

01 - Bananas with more brown spots pack more sweetness - you might want less sugar if yours are super ripe
02 - Don't worry if these aren't fluffy like pancakes - they should be flatter and moister
03 - For cast iron pans, turn down the heat to medium so you don't burn your fritters
