Keto Garlic Squid Dinner (Print Version)

# Ingredients:

01 - 1/2 lemon, just the juice
02 - 300g squid
03 - 2 garlic cloves, finely chopped
04 - 2 Tbsp olive oil
05 - 2 Tbsp tomato paste
06 - 1/2 cup fresh arugula
07 - 1/3 cup olives without pits
08 - 1 Tbsp basil, dried
09 - Grated Parmesan cheese
10 - Crushed red pepper flakes, add as much or little as you'd like

# Instructions:

01 - Put the squid in a pan, add a little water, and cook with a lid on for 3-4 minutes until it's no longer raw. Pour out any leftover water, then stir in the olive oil and lemon juice.
02 - Add the tomato paste, and if it’s too thick, stir in 2 tablespoons of water. Toss in the crushed garlic, dried basil, and a sprinkle of red pepper. Mix it all up, then turn off the stove.
03 - Toss in the olives and arugula, letting the arugula soften slightly. Sprinkle grated Parmesan cheese over the top before you dig in.

01 - This comes together in no time, so have everything prepped ahead.
02 - Don’t let the squid overcook or it’ll feel chewy.
