Lemon Chicken Orzo (Print Version)

# Ingredients:

01 - Fresh parsley, chopped - 1 tablespoon.
02 - Butter - 1 tablespoon.
03 - Carrots, finely chopped - 2 medium.
04 - Onion, chopped - 1/2 medium.
05 - Celery, finely chopped - 2 stalks.
06 - Flour - 2 tablespoons.
07 - Chicken broth - 6 cups.
08 - Garlic, minced - 3 cloves.
09 - Lemon juice - 1 tablespoon.
10 - Chicken breasts - 1.5 pounds.
11 - Orzo pasta - 1 cup.
12 - Italian seasoning - 1/4 teaspoon.
13 - Olive oil - 1 tablespoon.

# Instructions:

01 - Heat oil and butter, sauté onions, carrots, celery for 5-7 minutes.
02 - Toss in minced garlic, stir for half a minute. Mix in flour for another minute.
03 - Pour in broth, toss in seasoning and chicken. Bring to boil, then cover and simmer for 15 minutes.
04 - Stir in orzo and cook uncovered for 10 minutes. Keep stirring here and there.
05 - Shred chicken, put it back. Blend in lemon juice and parsley. Adjust seasoning to taste.

# Notes:

01 - Thigh meat works too.
02 - Chicken is done when it hits 165°F.
03 - Leftovers may need extra broth.
