                Preheat the oven to 175°C. Line baking sheets with parchment paper.

                In a stand mixer, beat shredded Cheddar, softened butter, half-and-half, and salt on medium speed until thoroughly blended.

                Gradually add all-purpose flour, grated Parmesan, and chopped basil to the mixture, beating just until the dough comes together.

                Transfer dough onto a surface dusted with flour. Divide into three equal pieces, then roll each to 3 mm thickness. Cut into shapes using a star-shaped cutter.

                Space the shaped dough portions 2 cm apart on the prepared baking sheets.

                Bake for 11 to 14 minutes or until golden. Allow to cool on the baking sheets placed on wire racks for 30 minutes.
