Parmesan Cheddar Basil Bites (Print Version)

# Ingredients:

→ Dough

01 - 250 grams shredded Cheddar cheese
02 - 115 grams unsalted butter, softened
03 - 75 millilitres half-and-half cream (10% milk fat)
04 - 1 teaspoon kosher salt
05 - 190 grams all-purpose flour
06 - 135 grams grated Parmesan cheese
07 - 3 tablespoons finely chopped fresh basil

# Instructions:

01 - Preheat the oven to 175°C. Line baking sheets with parchment paper.
02 - In a stand mixer, beat shredded Cheddar, softened butter, half-and-half, and salt on medium speed until thoroughly blended.
03 - Gradually add all-purpose flour, grated Parmesan, and chopped basil to the mixture, beating just until the dough comes together.
04 - Transfer dough onto a surface dusted with flour. Divide into three equal pieces, then roll each to 3 mm thickness. Cut into shapes using a star-shaped cutter.
05 - Space the shaped dough portions 2 cm apart on the prepared baking sheets.
06 - Bake for 11 to 14 minutes or until golden. Allow to cool on the baking sheets placed on wire racks for 30 minutes.
