Bacon Pesto Chicken Pinwheels (Print Version)

# Ingredients:

01 - 4 chicken breasts without skin and bones
02 - 1 container of basil pesto
03 - 8 bacon strips
04 - 1/2 fresh lemon
05 - Salt and pepper as needed

# Instructions:

01 - Turn broiler to HIGH and put the rack about 8-10 inches from the top
02 - Flatten chicken to 1/4 inch thick, slice down the middle, then add some salt and pepper
03 - Put 1 tbsp pesto on each chicken piece and roll them up like wheels
04 - Cover each rolled chicken with bacon, using toothpicks to hold if they won't stay
05 - Set wheels on a lined tray and drizzle fresh lemon juice all over them
06 - Cook for 7 minutes on each side until the bacon looks brown and chicken isn't pink. Wait 5 minutes before you eat

01 - Your chicken will be much juicier if you wait 5 minutes after cooking
