Pink Berry Beet Pudding (Print Version)

# Ingredients:

→ Base

01 - ½ cup chia seeds
02 - 2¼ cups plant-based milk
03 - ½ cup strawberries, thawed or right off the vine
04 - ½ cup steamed, diced beets
05 - 1 teaspoon vanilla extract
06 - ½-1 tablespoon maple syrup (if you like it sweeter)

→ Optional Toppings

07 - Handful of berries
08 - Crunchy nuts or seeds
09 - Shredded coconut
10 - Clumps of granola

# Instructions:

01 - Put chia seeds into a decent-sized bowl.
02 - Whirl together plant-based milk, strawberries, beets, and vanilla till it's silky smooth.
03 - Dump your pink mixture onto the seeds while you keep stirring to avoid clumps.
04 - Pop it in the fridge all night or for at least 4-5 hours.
05 - Give it a good stir, add maple syrup if you want, and throw on your favorite toppings.
