Pizza Toast Ham Tomato Mozzarella (Print Version)

# Ingredients:

01 - 2 large or 4 medium slices country bread
02 - Extra-virgin olive oil, for drizzling
03 - 1 ripe tomato, thinly sliced
04 - 1 ball mozzarella cheese (approximately 80 grams), cut into pieces
05 - 2 slices cooked ham
06 - 2 large eggs

→ Garnishes & Seasoning

07 - 1 scallion, chopped (alternatively use fresh cilantro)
08 - Fine sea salt, to taste
09 - Freshly cracked black pepper, to taste
10 - Hot sauce, optional

# Instructions:

01 - Set oven to 250°C for optimal toasting.
02 - Lightly toast bread slices, then arrange on a pizza stone or baking tray. For smaller slices, overlap two pieces to form one serving. Drizzle with olive oil.
03 - Distribute tomato slices evenly over bread. Scatter chopped scallion, then arrange mozzarella on top, forming a shallow well in the centre for the egg.
04 - Drape ham slices around the centre well, ensuring even coverage.
05 - Crack an egg into each prepared well. Sprinkle with salt and cracked black pepper.
06 - Transfer to oven and bake for 10 minutes, or until egg white is set and yolk is at preferred doneness.
07 - Remove from oven, garnish with additional scallion greens and a dash of hot sauce if desired. Serve immediately.
