Queso Cauliflower Cheddar Bake (Print Version)

# Ingredients:

01 - 2 heads cauliflower, roughly chopped into bite-sized florets

→ Cheeses

02 - 2 cups white cheddar cheese, shredded and divided
03 - 1 cup mozzarella cheese, shredded
04 - 1 package (225 g) cream cheese, softened

05 - 1 can (355 ml) evaporated milk

06 - 2 cans (115 g each) diced green chiles

→ Spices & Seasonings

07 - 3 teaspoons taco seasoning
08 - 1 teaspoon salt
09 - 0.5 teaspoon garlic powder

→ Garnish

10 - Fresh cilantro, chopped

# Instructions:

01 - Preheat oven to 190°C and lightly grease a 23×33 cm baking dish.
02 - Chop cauliflower into uniform bite-sized pieces and distribute evenly in the greased baking dish.
03 - In a large bowl, mix 1 cup of white cheddar cheese with the mozzarella and softened cream cheese until combined.
04 - Add evaporated milk, diced green chiles, taco seasoning, salt, and garlic powder to the cheese mixture. Stir thoroughly until sauce is homogeneous.
05 - Pour the prepared queso sauce evenly over the cauliflower and sprinkle with the remaining 1 cup of white cheddar cheese.
06 - Transfer baking dish to the preheated oven and bake for 30–35 minutes, until the cauliflower is tender and the top is golden brown.
07 - Remove from oven, garnish with chopped fresh cilantro, and serve hot.

# Notes:

01 - For best results, allow cream cheese to fully soften before mixing for a smoother sauce texture.
