                Preheat oven to 190°C and lightly grease a 23×33 cm baking dish.

                Chop cauliflower into uniform bite-sized pieces and distribute evenly in the greased baking dish.

                In a large bowl, mix 1 cup of white cheddar cheese with the mozzarella and softened cream cheese until combined.

                Add evaporated milk, diced green chiles, taco seasoning, salt, and garlic powder to the cheese mixture. Stir thoroughly until sauce is homogeneous.

                Pour the prepared queso sauce evenly over the cauliflower and sprinkle with the remaining 1 cup of white cheddar cheese.
