Cheesy Sausage Pasta (Print Version)

# Ingredients:

01 - 1 pound of turkey sausage, sliced into pieces.
02 - 1/3 cup thinly sliced green onions.
03 - 8 ounces of short pasta like penne or rotini.
04 - 1 medium onion, diced.
05 - 2-3 garlic cloves, minced.
06 - 1 tablespoon of olive oil.
07 - 1/2 cup milk or heavy cream.
08 - Salt and pepper to taste.
09 - 1 can (10 oz) diced tomatoes with their liquid.
10 - 2 cups of chicken stock.
11 - 1 cup of a mix of cheddar and jack cheeses.

# Instructions:

01 - Warm oil in a big pan over medium heat. Cook the sausage and onions together for 5 minutes or till lightly browned, then stir in the garlic for a quick minute.
02 - Stir in chicken broth, tomatoes, pasta, milk, plus some salt and pepper. Once boiling, reduce the heat to low, cover, and let it cook for 15 minutes until the pasta softens.
03 - Mix half the cheese straight into the dish. Sprinkle the remaining cheese on top, then cover for a few minutes till it's melted. Garnish with green onions.

# Notes:

01 - Drain any extra liquid before you add the cheese, if needed.
02 - Store in the fridge and eat within 4-5 days.
03 - Creamy sauces don't freeze well, so avoid freezing.
