Sausage Orzo Soup (Print Version)

# Ingredients:

01 - 1 cup orzo pasta, uncooked.
02 - 2 large handfuls of baby spinach or kale.
03 - 1/2 teaspoon of red pepper flakes, crushed.
04 - 6 garlic cloves, minced or smashed.
05 - 1 tablespoon of Italian herbs blend.
06 - 1 medium white onion, diced after peeling.
07 - 8 cups of chicken, vegetable, or beef broth.
08 - Optional extras: freshly-grated Parmesan, parsley, or basil (chopped).
09 - 1 (15-ounce) can of diced tomatoes, fire-roasted.
10 - Fine sea salt plus freshly-cracked black pepper, to taste.
11 - 1 celery stick, chopped into small pieces.
12 - 1 pound of ground Italian sausage, spicy or mild.
13 - 2 medium carrots, diced into cubes.

# Instructions:

01 - Break sausage into bits while browning it. Remove and leave a spoonful of grease in the pan.
02 - Cook the onion, celery, and carrots for 6 or 7 minutes. Mix in garlic and red pepper flakes. Cook it all a couple more minutes.
03 - Combine seasonings, tomatoes, broth, and sausage. Bring everything to a gentle boil.
04 - Mix orzo into the soup. Cover and simmer while stirring off and on until tender.
05 - Stir in spinach or kale. Add salt and pepper to your liking.
06 - Finish with a sprinkle of Parmesan or fresh herbs on top if you'd like.

# Notes:

01 - Orzo soaks up broth if left sitting, so add more as needed.
02 - Feel free to pick spicy or mild sausage based on your taste.
03 - Any kind of stock works great here.
