Shrimp Toast Bites (Print Version)

# Ingredients:

01 - One tablespoon olive oil.
02 - A single French baguette, sliced into 1/2 inch pieces.
03 - One pound of shrimp, peeled, cleaned, and minced.
04 - Three garlic cloves, chopped finely.
05 - Four ounces of cream cheese, diced into small chunks.
06 - A quarter to half a teaspoon of Cajun spice blend.
07 - Half a small onion, minced.
08 - One celery stalk, cut into small bits.
09 - A quarter cup each of shaved Parmesan and Fontina cheeses.
10 - Kosher salt with freshly cracked black pepper to taste.
11 - A quarter teaspoon of crushed chili flakes.
12 - One green onion, chopped thin.
13 - A sprinkle of fresh cracked black pepper.

# Instructions:

01 - On low broil, flip your bread slices on a pan every 3-5 minutes until golden on both sides.
02 - Heat up olive oil in a skillet, toss in your shrimp, onion, and celery, cooking for a minute. Next, mix in garlic and seasonings, cooking for one more minute.
03 - Turn the heat to its lowest and gently melt all the cheeses together, stirring until smooth. Adjust the seasoning with salt and pepper.
04 - Spread the shrimp mixture onto your toasted slices. Finish with some red chili flakes on top.
05 - Pop them in the oven at 400°F and bake until bubbly, about 10 minutes.
06 - Garnish with green onion slices and enjoy warm.

# Notes:

01 - Keep a close eye on bread while it broils, so it doesn't burn.
02 - Wild-caught shrimp is a better option if available.
03 - It helps to have everything measured and prepped before you begin.
04 - Use a vegetable peeler to make thin slices of cheese.
