Tasty Smash Burger Pancakes (Print Version)

# Ingredients:

→ Burger Components

01 - 250g beef mince with 15% fat
02 - 2 slices of mild cheddar or American cheese
03 - 40g of pickles, sliced thin
04 - 1 tablespoon of cooking oil with a neutral flavor
05 - 30ml of your favorite burger sauce

→ Pancake Batter

06 - 100ml milk
07 - 75g plain flour
08 - 1 tablespoon sugar (fine texture)
09 - 1 teaspoon of a raising agent (baking powder)
10 - 1 egg, yolk and white separated

# Instructions:

01 - Use an electric whisk or mixer to whip the egg whites until they form soft peaks that hold their shape.
02 - In a bowl, mix the egg yolk with the dry ingredients: flour, sugar, and baking powder. Gradually pour in the milk while whisking until it’s all smooth. Gently fold in the whipped egg whites from earlier.
03 - Warm a bit of oil in a non-stick pan over medium heat. Add a quarter of the batter to the pan and cook for 2-3 minutes on each side until golden brown. Repeat until you have four pancakes. Keep them warm in the oven while you work.
04 - Heat the pan again with some oil. Divide the beef into two equal portions, roll into balls, and press flat in a sizzling pan. Cook for 2-3 minutes on one side, flip, add cheese, and let it melt for another minute or two.
05 - Layer a pancake at the bottom, place a cheeseburger patty on it, drizzle with sauce, add pickles, and top with another pancake. Do the same to create the second burger.
