Soft Chewy Cookies (Print Version)

# Ingredients:

01 - 318 grams (2 1/2 cups) of plain flour.
02 - 2 teaspoons of baking powder.
03 - 3/4 teaspoon of fine salt.
04 - 2 sticks (226 grams) of soft unsalted butter, not melted.
05 - 1 1/4 cups (250 grams) of white sugar, plus another 1/4 cup (50 grams) for coating.
06 - 1 large egg.
07 - 1 egg yolk.
08 - 1 teaspoon of vanilla extract.

# Instructions:

01 - Set oven to 350°F. Lay parchment paper on baking trays.
02 - In a medium bowl, mix salt, baking powder, and flour using a whisk.
03 - Use an electric mixer to cream butter with 1 1/4 cups sugar for 2-3 minutes until fluffy.
04 - Mix in egg, extra yolk, and vanilla. Gradually blend in the flour mix.
05 - Spoon out dough balls (3 tablespoons each), coat with the remaining sugar, and slightly press them down on your trays.
06 - Bake for 10-12 minutes until edges are firm and just a bit golden. Cool for 5 minutes on the tray before moving to wire racks.
