In a medium bowl, mix salt, baking powder, and flour using a whisk.

Use an electric mixer to cream butter with 1 1/4 cups sugar for 2-3 minutes until fluffy.

Mix in egg, extra yolk, and vanilla. Gradually blend in the flour mix.

Spoon out dough balls (3 tablespoons each), coat with the remaining sugar, and slightly press them down on your trays.
